Low Carb Peanut butter and Coconut/Walnut muffins

Check out this amazing and healthy recipe by staff chef, Jess!
In food processor and blend the whole time:

1 c coconut butter

1 1/4 c walnuts
5 eggs
1 tsp vanilla
1 dash nutmeg
1 dash cinnamon
2 tbs lemon juice
1 1/2 tsp baking soda
3 tbs decadent blend by Spectrum (Chia, flax, coconut, cacao)
1/2 tsp salt
4 tbs peanut butter powder
1 ripe banana
1 1/2 tbs stevia
Stop blending, stir in 1/2 c chopped walnuts.
Pour into muffin pan sprayed with coconut oil
Sprinkle on shaved coconut flakes
350 degrees for 30 min
1 tbs coconut butter
2 tsp  cacao butter
2 tbs coconut oil
1 tbs stevia
3 tbs peanut butter powder
Blend in food processor and add heat until slightly melted  (we just put it in the sun!)
